Why two briskets of the same weight finish at different times

  2. Use the earliest end of your cooking window to calculate the start time. Finishing early is easier to manage than serving an unfinished brisket.
  3. Monitor the pit and the thickest part of the flat with thermometers intended for those jobs.
  4. During the final stage, check multiple spots in the flat for tenderness instead of waiting for one magic number.
  5. If serving later, keep the brisket at or above 140°F. USDA says perishable food should not remain between 40°F and 140°F for more than two hours.
